Braised Cabbage recipe

Ingredients:

2 cabbages.
½ lb of salt pork, cut into thin slices.
1 carrot, sliced.
1 onion, studded with 2 cloves.
1 sprig of parsley.
1 bay leaf.
Pinch of thyme.
2 cups of consommé.
Garlic sausage, cooked, to serve with.

Directions:

Cut the cabbages in quarters and remove the hard cores.

Wash and cook the cabbage in boiling salted water for 15 minutes.

Drain and allow to stand in cold water for about 10 minutes. Drain.

Remove the thick, hard ribs at base of the cabbage leaves.

Press the cabbage between your hands until all water gets squeezed out.

Line the bottom of Dutch oven or a heavy saucepan with slices of salt pork.

Add the sliced arrot, onion, parsley, bay leaf, thyme and cabbage.

Cover with the remaining slices of salt pork.

Add the consommé.

Bring to boil; then cover and simmer gently for 2 hours.

Serve hot, with cooked garlic sausage.
